Best Ever Banana Muffins

I've been on a bit of a cooking kick lately and these Banana muffins are one of my favourite treats to make. They taste great and there really is no rocket science involved so anyone can make them.

Ingredients

140g soft brown sugar
140g softened butter
140g self raising flour
2 eggs
2 overripe bananas (mash these)
1tsp baking powder

Method

  1. Pre-heat the oven - I used gas mark 5 but adjust/translate  accordingly. 
  2. Mix together the butter and sugar till you've got a light, creamy mix.
  3. Add in the eggs and around half of the flour. Mix thoroughly.
  4. Lastly add in the rest of the flour; the baking powder and the mashed bananas and mix it all together.
  5. Mix done, simply spoon the mixture into cupcake cases/muffin cases whatever you want to use (I use a muffin tray to hold these but a regular baking sheet works well too).
  6. Bake for approximately 25-30 minutes. I say estimates because it depends on your over and all that jazz. These times work for me. 
  7. Once they're done take them out and allow to cool completely before devouring. 
Decoration

As you can see I kept mine sweet and simple but if you're making them for an occasion, there's many things you could do.

The most simple way to decorate is mix a little bit of icing sugar and water and use a spoon to drizzle over your muffins. This adds another touch of sweetness as well as a bit of decoration.

If you're feeling particularly arty you could also top this icing drizzle with some nuts, dried banana chips or even chocolate chips if you really want to indulge.
