Leek and Potato Soup

Another different post from me today. Cooking has recently become a bit of a hobby for me. I find it therapeutic and the results are for the most part delicious. As it's been on the colder side in England this past week or so I've been really into soups. Hence today I bring you a super comforting, tasty Leek and Potato soup. I know it's nothing revolutionary but my god is it delicious. 

Ingredients

2 medium sized Leeks
1 Onion
4/5 medium-small potatoes 
1 Vegetable Stock Cube
Salt and Pepper
Olive Oil or whatever you prefer to use


Method

  1. Start by chopping all the vegatables (make sure to wash your leeks and peel your potatoes). You want to aim for small slices/cubes as this will make it easier to cook and blend up later on. 
  2. In a large pan or stock pot heat up 1tbsp of your chosen oil on a low heat. Add the veg and stir through till the vegetables have begun to soften. 
  3. While you're vegetables are softening, fill and boil your kettle. 
  4. Vegetables softened, add your stock cube to the mix and then pour over enough of the boiling water to cover the contents of the pan. Leave the pan to simmer till the vegetables have visibly softened/ gone sort of mushy.
  5. Once your soup mix is at this stage, it's time to blend the ingredients into a smooth soup. This is completely optional but I'm not a big fan of chunky soup. For this you can use a hand blender like I do or a food processor. You just want something that's going to break everything down and leave you with a silky finish. 
  6. Everything blended in (this may take a while) give it a taste and season as you wish. I'm partial to a tiny but of salt and pepper but you could really get creative. You could add a drizzle of creme fraiche or some pesto for example. 
  7. Eat. I like mine piping hot so a bowl doesn't last all that long. Alternatively you could also serve it cold where it would be called Vichyssoise. Personally not up my street but each to their own.
