Warming Vegetable Soup

I don't know what it's like where you are in the world right now, but in the UK it's freezing I've been dashing in and out of the cold for work so wanted to make something comforting for dinner today. This soup's the result and it's so yummy I just had to share the recipe. 

Ingredients

1 Onion
3 Carrots
1 Courgette 
3 medium sized Potatoes 
1 litre Chicken stock (or vegetable if you prefer)
1tbsp Olive oil



Method

1. To kick everything off, finely chop the onion. Add this to a large, warm pan with the olive oil in. Allow the onions to soften.

2. While your onions are softening, peel and finely cut the rest of the vegetables.

3. Prepare your stock (I cheated and used stock pots but use whatever you have to hand).

4. Once your onions have softened, add in the rest of the vegetables and your stock.

5. Simmer until all the vegetables are soft enough to be blended (10-15 mins).

6. Once everything's nice and soft, use a hand blender or food processor to blend everything together. 

7.Serve 




And that's it. The end result is a comforting, creamy soup that will delight your taste buds. Enjoy my loves.
